Cilantro Jicama Fiesta Slaw

A perfect topping for black bean burgers, salad, or a healthy taco (think pico de gallo substitute), this Mexican spin on coleslaw is a mix of spicy-sweet flavor. I love how it combines the acidic ingredients such as citrus, jicama, and cilantro topped off with a hint of jalapeño. This red cabbage slaw is cool, creamy and diary free. Double yum.
